It is the process by which in Geant4 an electron loses energy to the crystal.

The energy that is lost to the crystal is used to calculate the number of scintillation photons - that's it! The energy does not degrade the crystal as G4 is incapable of simulating anything to do with solid state physics (but it does take Birks Law saturation into account, albeit certainly not from first principles) or anything that has a time component that goes from 'one simulated event to the next'.
