The same as you did for the torus. You define a solid (G4Tubs, for example) and fill it not with a constant field but a field that you define and calculate to be a quadrupole field. Take a look at example: /examples/extended/field04.

To calculate the element field you will need the local coordinates of the G4LogicalVolume; see F04SimpleSolenoid.cc for how this is done.

I suggest you look at http://g4beamline.muonsinc.com. You may find that g4beamline already does all you want to do without you coding a line of C++.
