Hi Raffaello, there are many examples included in the examples directory of Geant4. You can also find some information on doing analysis with Geant4 as part of our tutorial at:

   http://geant4.slac.stanford.edu/g4cd/Welcome.html

However we can not really tell you what "typical physics variables" to histogram, it depends on what you are trying to simulate and what type of questions you are trying to answer.
